Medal wins for two Wodonga TAFE Commercial Cookery apprentices at AUS-TAFE state finals

Two First-Year Commercial Cookery apprentices won medals at the state finals of the AUS-TAFE Culinary Trophy held at Bendigo TAFE last Tuesday, 28 June 2022. Maddison Schloss (employed by Brown Brothers Winery) won a Bronze medal, and Tayah Jack (employed by Bright Brewery) won a Silver medal.
This success follows the apprentices’ earlier success at the regional finals held at Wodonga TAFE last month where they both won bronze medals and secured their place in the State finals.
The apprentices replicated their winning dishes from the recipes cooked for the regional finals, as follows:
- (Maddison) Pan-fried pork scotch with potato rosti, orange and rocket salad and dill yoghurt.
- (Tayah) Chinese-style pork San Choy Bau with julienned cucumber and carrot and chilli.
Participation in the AUS-TAFE Culinary Trophy provides students with opportunities to test and showcase their skills. The dishes again had to be served within set time constraints, and were judged on creativity, hygiene, presentation, cooking skills, and taste.
Wodonga TAFE Cookery teacher, Mr Cody May said, “This is a huge accomplishment for the students as they were competing against the best First-Year apprentices in Victoria, including students from Crown Casino.”
“It is very difficult to score a medal at a State final, so the apprentices are stoked with their results,” said Cody. “It is also a win for Wodonga TAFE and our Commercial Cookery training - to show our apprentices can compete at a high level with other apprentices from across the state.”
